My Pot Roast Recipe
This pot roast has a great flavor with the secret ingredient, horseradish.
Ingredients:
4 lbs. Bottom Round of Beef
2 Garlic Cloves, peeled and sliced in 3
1 1/2 Tbsp. Dry Mustard
3 Tbsp. Bacon Fat
3 Onions, diced large
2 cups Chopped Tomatoes
2 cups Beef Stock, heated
2 Tbsp. Tomato Paste
2 Tbsp. Horseradish
1 Bay Leaf
Salt and Pepper
Pinch of Thyme
Preheat oven to 300 degrees F.
Directions:
Make slits in meat to insert garlic pieces. Spread dry mustard over meat and press with fingertips so that mustard adheres to meat. Pepper generously.
Heat bacon fat in ovenproof casserole over medium heat. Add beef and sear on all sides. Add onions and continue cooking for 8 to 10 minutes over medium heat.
Season well, cover and cook for 1 hour in the oven. Turn beef over twice during cooking process. Add tomatoes and remaining ingredients to casserole. Mix well, cover and finish cooking for 1 1/2 hours in the oven.
When done, remove beef and set aside. Place casserole over medium heat and cook sauce about 8 minutes to thicken. Slice beef and serve.
