Grandma Carlita’s Pot Roast Recipe


This is an authentic Italian-style pot roast, that my grandmother used to make.


Ingredients:

4 slices Bacon, cut up

4 lbs. Blade Roast

1 large Carrot, chopped

1 stock Celery, chopped

1 Onion, chopped

1/4 Cup Parsley, chopped

2 strips Lemon Peel, about 2” long and 1/2” wide

1 Cup Dry Red Wine

1 1/2 tsp. Salt

1/4 tsp. Pepper

1 cube Beef Bouillon dissolved in 1/2 up of boiling water


Directions:

Put bacon in large heavy saucepan or Dutch oven.  Cook over low heat until pan is well greased.  Add roast and brown well on all sides.  Add all remaining ingredients, cover tightly, and simmer 3 hours or until very tender.


Take meat out, and strain the stock in the pan, pressing as much of the vegetables as possible through the sieve.  Return to saucepan, heat well and serve as gravy.  (For thicker gravy add 1 1/2 Tbsp. of flour per cup of liquid, mix it with cold water until smooth and stir into boiling liquid gradually.  Cook until thick and smooth.
